I'd freeze it and pack it into your extra cooler with a little dry ice and ship it UPS or FedEx Ground, Rod. We exhibited at the Fiery Foods Show and NYC Fancy Food Shows for years and that's what we did with the food we served there. A lot of it was still frozen when we opened the coolers. Just my 2¢....
