Do a search on BRITU. (Best Ribs In The Universe) There are many ways to smoke ribs, and everyone thinks they have the best method. The trick is to try different methods until you decide what works best for you. I use the BRITU method when doing ribs on the wsm and really love it. The whole process takes about five hours. There is no wrapping in this method. If ribs "fall off the bone" they are over-cooked in my opinion. Give BRITU a try..Good luck..
