MIM is different. It's all about preference. I've done them both and neither is perfect.
The MIM onsite judging means I have to sweep and clean up my workspace. That's a pain after tending a firebox all night.
With KCBS I gotta chop lettuce all morning. They say it's optional, but it ain't. We all know that sauce on a lettuce leaf means the BBQ ain't no good. :-)
