It depends on if you will have other BBQ meat. If you're planning on other meat (chicken, pulled pork, brisket, etc.) then 3 slabs ought to be plenty for 10 people. If it's ribs alone, then you ought to plan on half a slab per person with a little extra (I'd cook 6 slabs).

Other helpful cookout tips: Be sure to cut your slabs into 1, 2 and 3 bone sections before serving. You'll also want to place your ribs towards the end of the line so that folks will already have a full plate of food by the time they get to the ribs. If you put ribs out first, you'll find that folks will fill their plate up with ribs and skip out of the pasta salad because they ran out of room on their plate.
