Sounds like a nice rig. Probably shuold have done some research on the business side before picking up the Stumps. Lots goes into it from health dept, insurance, company set-up, other equipment, pricing, marketing, etc., etc., etc. There are some good books out there that expain the various ways to do catering and concessions. I would start using your search engine - google, yahoo or whatever - and start researching. You'll need a lot more info that the knowledgable folks here can give in 2 or 3 paragraphs. Good Luck.
