I hope you have a large smoker if you're going to smoke the whole bird - or you find some very young chicks. Emu's grow to be about 6 foot and weigh about 100 pounds. The skin of an emu is one reason they're bred so I don't know if I'd waste it by smoking the bird with the skin on. Bacon's cheaper probably.
