Each year I promote a bbq comp. that has a "mystery Meat" catergory. We provide the cookers with this meat and have them go at it. Very interesting results most of the time. In order to keep it fresh I try to come up with something different and a bit off-the-wall but it must be something that can either be grilled or smoked. I usually cook the meat I am considering to see how it fairs. This year one of the meats I looked at was Emu. After many trials of cooking I have discovered this is not a meat that benefits from slow cooking. It is a really red meat and very lean. I mean I tried all parts of this bird and it made no difference. The closest I could come to making it a long cook was to braise and stew ( not too bad by the way ) The taste is good but this is a meat you want to grill. BTW, if anyone coming to Gilroy this year reads this you know know to check Emu off of your list of mystery meat possibilities.
