There are lots of "off the wall" meats out there but most don't do well under dual cooking options ie; smoking and grilling. If you want to smoke you must find something with a high enough fat content to go the distance things that I found work in this area are duck ( not off the wall), Buffalo Hump, a personal favorite and look into Beefalo, a cross between buffalo and steer. Grilling is much easier to find odd meats like aligator, rattle snake and osteridge (sp, sorry ) Good q'n to ya Josh.
