Once we got the boil going we never emptied it, just added more cayenne and citrus in between boils. Put in the mudbugs so you can pull them ALL out before they cook too much...in other words do small batches (30-40) instead of huge ones (all of em). We always did add oranges, lemon, lime, grapefruit and/or tangerines to the boil. Learned that in Metarie, La. Don't forget the corn and red potatoes, plenty of newspaper to cover the table, and maybe 8 buckets...3 for shells and 5 for beer. If you are up to it you may wanna throw some crabs and shrimps in while no one is lookin. Have fun and a great boil!
