they won't be touching the entire time due to shrinkage and once you wrap them in foil the internal temp really climbs up in a hurry. I put them on at 10:30 this morning and I am about to pull them off at 6:15, they are at 195 internal......
but you are absolutely right about meat touching and extending the cook time....... air flow is key
