Thanks Rub ~ here's a couple pics and the formula. I started out with about a pound of catfish, but by the time I was done nibblin'...I only had about 3/4 of a pound for the spread ~ coulda used a lil' more. (g)

Fresh channel catfish filets, marinated overnight in Poboy's Mustard Sauce ... then dusted with Dizzy Pig Swamp Venom ... and smoked for about 2 hours, apple and pecan wood ... flaked ... fold into cream cheese mixture. Great on a Ritz cracker ~ washed down wit a cold brewski!

smoked catfish (about a pound)
12 oz cream cheese
couple T butter
2 T sour cream
2 T mayo
juice and zest 1 lemon
1 diced garden bermuda green onion (about 1/4 cup)
3 diced peppadews
2 T poboy's mustard sauce
1 T dirty dick's oral abuse (or hot sauce of your choice)
fresh dill
kosher salt
white pepper

Cream the cream cheese, butter, sour cream and mayo ... fold in everything else, mix well ... chill.
