If you cook this to 180 or beyond it will not slice well, but it's perfect for pulling. At least that's what I have experienced.
I posted this question last year and a couple of people said they cook them all the time to 155-160 and then slice. They said it's a poor man's prime rib, but perfect for catering as long as it's not over cooked.
Try smoking till it hits around 155 and slice a piece and see what you think.
