Me, I'd keep the sandwich simple. Feature the meatloaf first and foremost. So soft egg bread (challah mebbe)with a big fat slice of meatloaf, lots of sauce, a slice of provolone and then some thin chile onion strings on top. Another way to go is to put olive salad on the bread with the provolone.
I think Chez did something similar a while back. He always layers 'em up pretty good.
