The method matters. The heritage matters. The competition isn't just about the finished product; it's also about preserving and honoring the pit master methods and traditions that produce that product.
Now, I'll be smoking ribs on all week for some friends' racing teams this coming Saturday, and I'm using a Smith and Wesson pellet cooker (no thermostat) instead of one of our stick burners. I have no problem with making good barbecue easy at home. And the S and W makes good BBQ if I don't mess it up. But in a contest, the method and the heritage matter.
The original point of this thread, two GC's in a weekend, is amazing, though. Incredible performance.
