Now, I'll be smoking ribs on all week for some friends' racing teams this coming Saturday, and I'm using a Smith and Wesson pellet cooker (no thermostat) instead of one of our stick burners. I have no problem with making good barbecue easy at home. And the S and W makes good BBQ if I don't mess it up. But in a contest, the method and the heritage matter.

The original point of this thread, two GC's in a weekend, is amazing, though. Incredible performance.
