I have my share of stick burners at home, thanks. And the goal at home is to make great barbecue, period. But at a competition, it's different. Why do you suppose the chuck wagon cooking competitors don't use ovens? Because they respect the heritage. I don't expect all the teams who got into the hobby recently to get it. By recently, I mean after the set-it-and-forget-it cookers entered the scene, and after hundreds of rubs and sauces started showing up on shelves. Not everyone who competed before all these conveniences came along is going to appreciate what we did before. But damn, it'd be nice if some would.
