While I can see what you are trying to say Pat. Let me just say... Can one respect the history and the future at the same time? I for one try to learn as much about the history of comp cooking as I can. I like to know qabout those that came before us... But just like NASCAR, technology has changed our sport/hobby... We can either welcome technology with open arms and embrace it. Or we can push it away with both arms and say it';s not for me. But if you ar the latter, just don't say we are cheating or not respecting the history of BBQ. As I for do respect it and I also have the most advanced technology I can afford.
