OK, PAT...Huge help here, Thanks! I have a therm mounted on lid, long one I can stick though a hole in the side and 2 probes to monitor each level, then stick in the meat. I ended up getting 2 butts, so I have 2 butts and 2 picnics. I was going to put one of each on each level and like you said just monitor the temps. Do you think I will need to rotate them?
