I think they had 7 or eight judges this contest, each judge judged every entry. They get a plastic knife and fork to cut off a piece. Chicken instructions are if you start off with dark meat, stick with dark meat for every entry. A judge only takes a small amount to taste. Different judges for each category. One neat thing, after the awards you can see and taste (if you want to) what's left of the winning entries. No score sheets...
