Tenderloin and Ribeyes are too common. Make up a Matambre. Recipes abound, but basically its a butterflied flank steak stuffed with veggies, egg, and cheese, rolled up, tied and roasted. Its very popular in Argentina. When stuffed and rolled, then sliced, it makes for great presentation, and its easy to do. Cooks pretty quick too.
