First off, what was your target temp?
I usually pull mine when it's about 10 degrees from target temp..my target temp is 190-193..the common rule of thumb is that meats will continue to cook to about 10 degrees higher than what you shoot for. Personally, I think you may have overshot your target temp.

Also, how long did you rest it? I go as much as 4 hours for resting, and although it's always still very hot when I unwrap it, it's managable to handle and cut. I don't think your extra foil did anything but give you some real good insulation.
