Yep, they sure can. When I worked for Smoke'n Dudes in Bensalem, PA we did it all the time. They'd smoke a bunch up and cool them overnight and then we'd pull them the next day. It always seemed to work better when they were cold. We'd vac-pack them for the next road trip and then freeze them. No biggie.
