If you have an upright smoker, it sounds like you have what is called an ECB around here. If I remember right, mine would cruise at the "I" in Ideal, but only after I drilled an airhole in the charcoal pan. Get a remote digital thermometer to get a reading at the grate level. You can also search the forum archives for "ECB" and see what you come up with.
