I trim and prepare my meat on site at the contest. At my last meat inspection I had my ribs (cryovac Packed), pork butts (cryovac packed), briskets (cryovac packed) and chicken in several plastic bags in origional packaging. The inspector that I had to have my chicken in a separate cooler to prevent cross contamination. I said, "Huh?" He said it was a new KCBS rule. He passed my meat but said to keep it separate for my next event or I'll have all my meat DQed. I checked the 2008 rules and didn't see anything about it. Did I miss it or has the official on line rules not been changed?
I would understand the need if I prepped my meat at home. But my meat was in cryovac packs. The possibility of cross contamination is nil expecially with the chicken in its origional package in several sealed plastic bags. The cryovac pack are usually rinsed off before opening.
