I'd turn the FEC up to 300, oil 'em down, rub 'em with Lotta Bull / some extra Kosher salt and black pepper and take them to my desired internal temp. I do this with prime rib and they turn out great. Did an $8000 wedding catering for 200 this spring and they were a huge hit!
