FWIW, the BRITU recipe also is high in salt and I believe the instructions for its usage says to put the rub on the meat, let the meat begin to sweat a little (it doesn't take long), and put the meat into the smoker. I mix Buttrub with dry brown sugar about 50:50 and have never had my ribs turn hammy. BTW, I smoke loinbacks. Good Q'en On Ya'. John
