Sounds like you're overdoing it with injection or cooking. That muscle won't stand up to the treatment you give the rest of the butt. Cook a butt just for that purpose, knowing the rest of the butterflied meat won't be used for any competition turn-in.
Practice on several, pulling them at 10 degree internal increments. Make sure they don't coast up in the cooler after cooking. You'll soon find the temp that works best for you.
