The big stripers and blues are finally here. The stripers will be either thrown on the grill right away or sealed and frozen, and the blues get the brine and smoke. I caught a 12 lb blue tonight, and will smoke and give some away. I have never sealed and just refridgerated the fish, and was wondering if anyone knows how long an unopened bag of very smoked fish steaks 1-1/2" thick will last-week? Month? Freezing is out of the question, as the results from past years have resulted in a not so good product-that is why I want to try something different. Thanks!
