I am new to the pro circuit this year and I was blown away by the expensive, hands-off machines many cooks use. I use an offset barrel smoker that runs at 225-230 all night with me adding fuel every 90 mins. or so. Rain, air temp., and beer all affect the pit and I have to adjust to each situation. The only sleep I get is a nap in a lawn chair or in the back of the truck. It's not hard, but I take pride in being involved with every part of the smoking.
Sleeping 10 hours in a $200,000 dollar RV while a computer drops sawdust pellets in the fire box just wouldn't feel right. I even saw a team set up their pits and leave to spend the night in a hotel! I'll stay low-tech and hopefully win a contest or two.
