Yo Sam, Cooking at 250º, I would plan on at least a 12 hour cook. You can speed things up if you want a little by cooking a little higher and you can foil the ham too.

You didn't say what you were cooking on. If you do foil the ham towards the end of the cook, you might as well bring it inside and put it in the oven to finish cooking.

Like I said before, since this ham is uncured, it will taste like roast pork. That's not a bad thing, but make sure your guests know this in advance so their taste buds are not confused. The hams I have cooked have all been served at a traditional pig roast. We just served bbq sauce to go with it. Although I don't have a suggestion for the style of dinner you will be having, I wouldn't suggest BBQ sauce.
