Since it's California, a guaranteed winner would be a grilled/smoked veggie wrap. Could smoke the dusted veg ahead and make the wraps then place them in foil/paper and just keep 'em warm and moist. Use a tasty sauce like a mustard based thick vinagrette or asian peanut sauce. You will sell out!! Bell peppers, eggplant, onions, squash, split brussel sprouts, baby romaine, cabbage, etc and add in a little raw jicama for crunch. Big margins. Also think about hogwings. Just protein on a "stick" after all.
