With any sharpener, you should only have to "overhaul them" once every few months at most, and that's with regular use. In between time use your steel to keep them honed. I brush mine up with a steel before each use. A steel does take some practice, but after awhile you can use them well and quickly without even looking. Go on 'you tube' or something to watch a 'how to' video on using them, there's a few different techniques. I use the pull towards me style, sliding the knife from the tip of the steel, towards the handle and across at the same time. A dozen or so strokes is usually good once you get the hang of it. At my dad's restaurant growing up, I would do eight ten knives in 10-15 minutes few times a day for years. Got pretty good at it after awhile and a few cuts to teach me what 'not' to do ;-)
