In that case the cook is presenting chicken and sauce and he/she thinks that is the best combined product. The judge in that case should judge it as presented.
As a cook, I'd rather turn in a shinny piece of chicken vs a dull piece. And you can get a glossy sheen without it even being sweet or "candied".
