You might be right, although all you have to go by is a picture.
"Patented tenderizing process" could mean anything from chemical to mechanical processing. I'd have to see the actual product label to know for sure.
Come to think of it, I know a guy who I think recently retired from Hormel - I'll ask him about what's done to these ribs.
