All my years in Cali and back home in Michigan I've never tried to smoke one. Always done the Santa Maria style to perfection. Salt, pepper, and garlic powder rub, high direct heat, turning over every 10 minutes cooking for about 30 minutes til a nice brown crust forms. Let rest for about 10 minutes, then slice against the grain.
