I hope you are wrong on this being a trend this year! That being said, I remember well the first contest I judged. At the judges meeting, we were given the 'pencil' guide line as well as the pull test for tenderness. Any entry sliced thicker than a #2 pencil was probably over cooked, and if cut thinner, would fall apart when picked up; cut thinner, it was probably under cooked or tough, and would fail the pull test if cut thicker. I thought it was BULL then and now.
