We start with medium size thighs. Then trim into a squarish shape removing the oyster etc. Then you can "roll" it parallel to the bone pulling the skin tight. Hard to explain. We then start them off cooking packed fairly tightly in a foil pan until they hold their shape--about an hour. then you can put them direcly on the grill and the shape should hold. Nice uniform look and easy to fit in a box. john
