If you go to www.homeofbbq.com and click on Comp Tools in the menu bar on top it will take you to a section with an outline of anticipated expenses and possible revenue generators. It's fairly detailed and a number of experienced people lent a hand in putting it together. It is KCBS centric, but there is a lot of good information in there.
There is also a program in there that you can d/l that will allow you to enter the amount of teams competing and will tell you how many of each item you will need (how many tables, how many judges, how many bottles of water, etc.).
