Yes you can have too much smoke. I use cherry , oak, and hickory. They all have eight percent or less moisture content. The higher the moisture, the heavier the smoke. Too much is too much. I've been reading your postings and the replies. My conclusion is that you should go back to oak.

I follow the advise from the guys who post on here. Most of these guys live barbecue. They visit the forum just to give advise and help others.
