That said, no problem not wanting to use it today, just keep it in the arsenal...
Let's keep it basic. Rub the butt and brisket with the chosen rub. Get your cooker to your chosen temp(I like 275). Put on the meat. Cook at a steady temp for about six hours. Take internal temp reading. You are looking for about 195 or so for a finish temp on both meats(assuming you want to pulled pork). You will have a couple of more hours of monitoring.
Now, to your basic question, one will be done first, and it does not matter which. Now you need to get the foil out. When the first one is ready, foil it, wrap in an old blanket, and then place in a cooler. This roast will stay hot until the other is ready...
