Smoking a deer back strap

My friends came down this weekend and brought a deer back strap they
want smoked.Well guess what?I have never smoked one ever.Well I
told them I would ask you folks,for if anyone can help it's you.

The interanl temp is important but I do not know what to bring it to?
I thought about briming it in apple juce,so any help you can help me with would make us have a great dinner tomorrow.
