Take cash or local checks only, if possible. we do a lot of catering, and i wish that i could have only cash or checks. the credit cards require separate tracking, fees and take a few days to hit my account. if there is any way to not accept cc's, go that route. if you have to take them, check around with several different cc processors (if you dont go paypal). the rates vary a lot. we just switched from one company to another and are saving about $500 a month in fees. i would start with your bank and ask them if they have a 'preferred' cc processor. sometimes you can get better deals that way.
