Have you cooked bear at all before? I used to go bear hunting way way north up in Canada for years and have gotten a few.
Story...
At camp there were some guys from Michigan that one of them shot a bear the first night. They invited us up to there cabin for bear meat and poker that next night.
I went and played poker but I refused (nicely) any of the meat they had cooked in a big ole pan on the stove. It looked plenty cooked but I knew of horror stories about bear meat.
After that night and most of the next day everybody that had some of that meat got sick. Semi-seriously sick. They couldn't get out of bed or bathroom for the rest of the week.
The thing about bears are that they are not hunters mostly. They are scavengers. They smell something dead a mile away and they are off to find it and eat it (you don't want to know what we used to bait them)). They will come across a dead fawn that's been baking in the sun for a week and eat it. They aquire really bad stuff when they eat like that. But it doesn't effect them. They have an ammunity to it.
But it's in there system. Now someone shoots said bear. We are not ammune to it and we get sick.
I left my bears for the indians (minus the rugs)).
Just be careful and wouldn't smoke it if I were to cook it.
