I'd go with wood. Being involved with microbrewing, I've seen many a batch of beer spoiled due to fermenting in food grade plastic carboy. A minor scratch can harbor enough bacteria to spoil a batch of beer. With that being said, is it enough to get you sick? probably not.
I was at the Gates BBQ in KC at linwood and main a few months ago. From the counter you could see into the kitchen. There was a guy chopping meat with a cleaver on a wood cutting board. There was a hole cut into the cutting board at least a half inch deep and six inches in diameter from chopping.
No issues that I know off.
Check the USDA website. Use a bleach/water mix and rinse thoroughly. You'll be good.
