Here ya go folks. Ping me when ya get a call. Folks say they share but I think they hold something back. Nothing held back here
Rub:
1 part Ancho Chili powder
1 part Paprika
1 part Lime Pepper
1 part Lowery season salt salt
1 part MSG
1/2 part basil
1/4 part really hot Cayenne
Do not marinate your thighs. Make sure you have all right side or left side thighs. Buy 30 or so and pick the best 8 that are the same size so they all cook the same. 1 hour before cooking, lightly season under and over the skin............lightly! just before you cook, give a little olive oil under and over skin. Pin skin tight with poultry skewer. on a trash can cook skin side down for grill marks for 10 minutes at 275. Move to a Weber that has 50 brickets that are already white hot (place them on one side of the grill). Give another slight coat of olive oil and rub on top of skin and place on the grill top and bottom vent 1/2 open for 40 minutes with a small chunk of cherry. Mix 1/4 apple juice and 3/4 KC Masterpiece in a foil pan and heat. put 1/4 inch of sauce in the pan and place the chicken in. cover with foil and cook at 225 for 45 minutes. Take out and inject with 3/4 chicken broth and 1/4 salted butter. You will get a call!
