Dump the flats, Use packer cut briskets, trim a little more bark (fat) there are only 5-6 good slices to turn in off a packer, make shure your knife is razor sharp, you will want to use 2 keep one in (ice water with 1 tsp of salt dissolved) keep your knife cold!!! it will cut true!! use a better rub with more sugar in it, make shure your slices are uniform, your garmish keep in ice water until you need it ( let it bloom) drain well wipe off all water,also work on your smoke ring other than that i feel you had a good start, remb this is supposed to be fun---DRR
