While I can only speak for myself, the KCBS rules say to use a beef brisket. As we all know, veal is beef and the KCBS rules don't say how old the animal must be from which came the brisket. That said, I've never, ever seen a veal brisket in any kind of a butcher shop.

However, I have a fabulous, albeit very labor intensive recipe for a stuffed breast of veal that I believe is a "killer" of a dish. It's from one of Julia Child's Cooking With Master Chefs shows from long ago. My better half believes the end result is not worth the effort, but I confess that I had fun making it, even though it took several days to do it. If you're one who enjoys the "doing" as much as the "destination," as I do, you may enjoy making it, too. Good Q'en On Ya'. John
