I'm gonna have to try Stubbs again, and also try to find some Royal Oak. I googled Royal Oak this morning and learned Royal Oak is sold by Ace Hardware, which is good news since our Walmart stores only carry it in lump.
I bought my first bag of Stubbs charcoal last week and had a strange experience. I cooked a big brisket that I put on at 9:00 p.m. Went to sleep, woke up at about 4:00 a.m, and the fire was only burning in one small place. The temp in the WSM was down to 169 degrees. I had started the fire with the Minion method and had it settled in at 225 when I put the brisket in. I have no idea why it went out in all but that one place unless I closed the vents down too much before it caught on fire in other places, or maybe some moisture had gotten in the sack. I cooked the brisket in the oven until I got the charcoal going again with a chimney, and it finally turned out ok. The ashes it produced was much less than the current-day Kingsford, so it is worth another try.
