The ribs came out great today. There was no foul smell of charcoal on them at all, although I added unlit charcoal on top of the hot coals several times during the cook. I had some left-over Stubbs charcoal I used until it was all gone and then started adding unlit Royal Oak lump. I haven't had this barrel cooker very long. I bought it mainly for cooking ribs and I feel like I've about learned how to manage it. The nice thing about a barrel cooker is that you can easily open the hinged lid and get to the ribs and charcoal basket ... and you can lay three or four slabs of ribs out flat on the grate, which makes it easy to rotate and turn them and spray them. Yep, I'm a happy camper with this rib cooker. Thank you guys for talking to me about the charcoal.
