Going to smoke a couple Boston Butts and a Turkey on a WSM for Thanksgiving, along with a Fried Turkey.
I was planning on smoking at 250 for about 8 hours (14 lb Brined Turkey) but reading a lot that suggest 350 for 3-4 hours. Is this higher temp method a lot better?
I do have an 18" and a 22" WSM so can seperate them if I have to.
