The Good Dr is a lot more "learned" cook than I am but I've always said people over-think Prime Rib. For years I've been cooking Prime almost exactly like drbbq - worchestershire, montreal and a light sprinkling of garlic and onion powder instead of the Lawrey's.

I have no problem using a Select grade 13 1/2 down, lip on, 21 day aged minimum over a Choice grade. Properly seasoned and cooked, I get a better yield on the Select and a better flavor - IMHO
